Fall Recipe Ideas from your South Austin Rentals

Fall comes a little late to our South Austin apartment community, but it’s finally here. The weather might not be as cold as it is up north, and the leaves might not change colors as dramatically, but we can still enjoy autumn in Austin.  


One of the best things about fall in Texas is that you get to enjoy the outdoor activities in Austin without breaking a sweat. You can kayak on Lady Bird Lake, hike around McKinney Falls and take a stroll through the Greenbelt, all without having to shower once you get back. If you tried any of those things in the summer, you’d have to bring a gallon of water and an extra shirt to mop the sweat off your brow.


There’s more to love about the fall than just the outdoors. One of our favorite things about the fall is the variety of new cooking ingredients that become available. Fall cooking is all about forgetting the light, airy meals of the summer and diving into the heartier meals of the cooler season. Say goodbye to fruit salads and say hello to pumpkin-flavored everything. The two recipes below are both pumpkin-based recipes, so we hope you’re a pumpkin person!


We think our residents will greatly enjoy the two recipes that we talk about below. If you don’t like pumpkin, you won’t like these recipes, but all hope is not lost. You can always get in the fall spirit by enjoying some caramel apples while everyone around you stocks up on pumpkin puree.

Pumpkin and Sausage Pasta


These are the ingredients you’ll need:


  • Olive Oil

  • Italian Sausage

  • Garlic

  • Onion

  • Bay Leaf

  • Sage

  • Wine

  • Canned Pumpkin

  • Chicken Stock

  • Heavy Cream

  • Cinnamon

  • Nutmeg

  • Penne

  • Romano Cheese

We’re starting things off with a strong pumpkin recipe. What’s fall without a little pumpkin in your life? If you get your daily dose of pumpkin from Pumpkin Spice Lattes, you probably don’t want to end your day with a pumpkin-based dish, but maybe your pumpkin obsession knows no bounds. This is the perfect simple meal to make at the end of the day, when the sun has set early and all you want to do is enjoy dinner in front of your favorite series on Netflix.


Pumpkin Soup with Popcorn


These are the ingredients you’ll need:


  • Butter

  • Leeks

  • Garlic

  • Ginger

  • Curry Powder

  • Popcorn

  • Chicken Stock

  • Pumpkin Puree

  • Heavy Cream

  • Lime

  • Salt


We’ve got another pumpkin recipe! Sorry, but we’re a little pumpkin-crazy right now. There’s no other time of year in which it's acceptable to talk about pumpkins this much, we have to do it while we can. This pumpkin popcorn soup recipe is very simple, and makes for a great lunch to enjoy at work. You can make a bigger batch by doubling the ingredients. If you do that, you might have enough pumpkin soup to get you through the winter. Of course, this is Texas, so “getting through the winter” isn’t all that impressive.
